The principle is that the addition of magnesium sulfate in the water phase can reduce the freezing point of the water phase in the product, and avoid the water phase solidification resulting in excessive expansion of the internal phase volume due to the decrease in temperature. Salt lowers the freezing point of water in the same way that salt is sprinkled on roads in winter to keep stagnant water from freezing.
2. magnesium sulfate as a bivalent salt, dissolved in the water phase, can improve the ionic concentration of the water phase, so that the solubility of W/O emulsifier in the water phase is reduced, that is, it can be better dissolved in the oil phase, so as to ensure that the emulsifier in the oil and water phases have a suitable dissolution, the resulting oil-water mask is more uniform, so that the stability of the final product can be improved.
